Absolutely not! This course is designed for beginners and more experienced bakers who may not be familiar with gluten free baking.
All but one of the recipes (chocolate babka) can be made dairy free. All but two of the recipes (chocolate babka and cheats sourdough) can be made dairy free and egg free (vegan)
The only specialist ingredients you'll need are either my gluten free flour blend or teff flour, buckwheat flour, potato starch, sorghum flour and tapioca starch. You will also need psyllium husk powder which is widely available online.
No, you don't need anything special to make these bread recipes. A stand mixer makes mixing up the dough easier but it certainly isn't essential. A large mixing bowl, tins and digital scales are about the only things you'll need that you might not have! I recommend what I use in the first section of the course.
I generally don't recommend using one for gluten free bread because they don't give consistent results. Each bread maker has its own settings and even if it has a gluten free setting each machine will have different timings in this setting. I also find that bread machines tend to allow the dough to rise and then knock it back, followed by a second rise before baking. In my experience this isn't necessary with gluten free bread and just leads to a lower rise and more dense bread. My recipes are so easy to make by hand that I highly recommend doing that. The results are far more consistent.
